Graduated in Veterinary Medicine he thaught at Pollenzo’s University of Gastronomic Sciences. In 1996 he became Director of the Association and, subsequently,President of the La Granda Breeders Consortium where, starting from 2004, his path of continuous innovation led him to a new experience as entrepreneur. Also in this period he was invested in the position of National Livestock Manager for Slow Food and as Meat Quality Manager of the Eataly group, roles in which he is still active. Mr. Capaldo collaborates with BPA Ltd as High Quality Food Industry Consultant.
